Shrimp Tacos

  • Measuring cups
  • Measuring spoons
  • Cutting Board
  • Chef’s Knife
  • Zester
  • Small Bowl
  • Whisk
  • Citrus Juicer / Reamer
  • Small sauté pan
  • Large Saute Pan
  • Tongs
  • Wooden spoon or spatula
  • Stove Top

FOR THE SAUCE

  • 1 tsp sweet paprika
  • 2 cups Greek yogurt (or sour cream)
  • 1 juice and zest of a lime
  • salt (to taste)
  • pepper (to taste)

FOR THE TACOS

  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 2 Roma tomatoes (small dice)
  • 2 lbs shrimp (buy frozen, shelled and de-veined, defrosted)
  • 3 limes (1 cut in half and 2 cut in wedges)
  • 1/2 small head red or green cabbage (finely shredded with a sharp knife)
  • 8 corn tortillas

FOR THE SAUCE

  1. In a small bowl, whisk the paprika, yogurt or sour cream, and lime juice and zest

  2. Season with salt and pepper and set aside

FOR THE TACOS

  1. Heat the olive oil and garlic over medium high heat in a large sauté pan

  2. After the garlic has lightly browned (about 30 seconds in), add the shrimp, tomatoes, and a pinch of salt and pepper and cook until shrimp have turned pink and tomatoes have softened, about 4-5 minutes

  3. Remove from heat

  4. Squeeze the halved lime over the shrimp mixture and mix well

  5. Taste for seasoning and add additional salt and pepper if needed

  6. In a separate small, dry, warm the tortillas one by one over low heat, 2-3 minutes

  7. Serve shrimp over tortillas with a tablespoon of sauce

  8. Garnish with cabbage and a lime wedge

  9. Serve remaining sauce on the side

  10. Enjoy!
