Savory Taco Pop Tarts

  • Measuring cups

  • Baking Sheets
  • 2 boxes refrigerated pie crusts (room temperature)
  • 1 tbsp olive oil
  • 1//2 yellow onion (diced)
  • 1/2 lb lean ground turkey (or chicken)
  • 1 tbsp taco seasoning
  • 1 cup frozen corn (thawed)
  • 1 can black beans (15 oz can, drained)
  • 1 cup shredded cheddar cheese
  • 1 egg (beaten with 1 tbsp of water)
  • sesame seeds (for sprinkling)

OPTIONAL INGREDIENTS

  • 1/2 cup Greek yogurt
  • 1 lime zest
  1. Pre-heat oven to 375 degrees F

  2. Cover a baking sheet with parchment paper; set aside

  3. In a large skillet, over medium-high heat, heat the olive oil. Sauté the diced onions for 3-5 minutes

  4. Add the lean ground beef (turkey or chicken), and cook by breaking up the meat with a wooden spoon, until completely cooked through (no pink remaining)

  5. Add the taco seasoning, and stir to combine

  6. Add the corn and black beans; cook for 2-3 minutes more

  7. Remove from heat and let cool until warm

  8. While the filling cools, start cutting out the pie crusts. Working with one crust at a time, unroll onto a flat work surface and cut the circular sides off the crusts – leaving you with a large 4-sided pie crust

  9. Cut the pie crust into 5 rectangles. Repeat with the remaining pie crusts

  10. Place the piecrusts on the prepared baking sheet

  11. Top half the piecrusts with 1 tbsp of the meat filling, followed by 1 tbsp of shredded cheddar cheese

  12. Top the filled pie crusts with the remaining pie crusts and gently press around the edges

  13. Use a form to crimp and seal. Cut a slit in the top of the pie crust to allow steam to release

  14. Make the egg wash: egg and water. Brush each pie crust top with the egg wash

  15. Sprinkle sesame seeds on top of all the pie crusts

  16. Bake for 12-15 minutes, or until golden brown.

OPTIONAL

  1. Make a yogurt lime dip to serve with! 1/2 cup of plain Greek yogurt, with lime zest about 1 lime.

  2. Serve with a dollop of lime dip on top

  3. Enjoy!
