Cheesecake Stuffed Strawberries


  • Measuring cups
  • Measuring spoons
  • Cutting Board
  • Pairing Knife
  • Medium Bowl
  • Rubber spatula
  • Electric mixer
  • Baking Sheet
  • Pastry bag or gallon-sized Ziploc bags
  • Scissors
  • Meat mallets or rolling pins – for crushing graham crackers (optional)


  • 1/2 lb fresh strawberries rinsed and patted dry
  • 4 oz cream cheese softened
  • 1/4 cup confectioners’ sugar
  • 1/2 tsp vanilla
  • graham crackers crushed to crumbs, a few crackers worth
  • chocolate chips optional


  • Use a pairing knife to cut off the strawberry stems
  • Cut around the inside of the strawberry, hollowing out slightly and creating a well for the cheesecake filling
  • Cut off just the very end of the strawberry tip, so that each strawberry can stand up
  • Place the berries on a baking sheet
  • In a medium bowl, use a handheld electric mixer to beat the cream cheese, sugar and vanilla until fluffy, about 2 minutes on medium speed
  • Place mixture in a pastry bag (or a gallon Ziploc bag with a small corner snipped off) and pipe filling into each strawberry, adding a little extra to the top
  • Sprinkle the graham cracker crumbs on top of each stuffed strawberry
  • Add chocolate chips on top
  • Eat immediately or refrigerate
  • Enjoy!


Take It Down A Notch – This recipe is perfect for a pre-K or young Tiny Chef. Let them crush the graham crackers in Ziploc bags with meat mallets or rolling pins. You may want to cut the tops off and hollow out the strawberries for the very young kids, but with supervision 4- and 5- year old’s can manage that step with plastic knives.Kick It Up A Notch – To make this recipe a little more interesting, bring in some chocolate chips, which you can melt in a double boiler. Then either have the kids dip the filled strawberries in it and then roll in the crushed graham crackers, or place the melted chocolate in another Ziploc bag and snip a tiny bit of one corner off and have them drizzle the chocolate over the finished strawberries. Let chocolate set up for 5 minutes for the chocolate to harden.
