Italian Ribollita Soup

Snow in March calls for some serious comfort food to soothe our spring sorrow.

This soup is just what the doctor ordered. It’s filling and filled with veggies and protein. Let the kids help with the bread and stirring the soup!

Serve with a salad for an extra serving of veggies!

Italian Ribollita Soup

Ingredients
2 Tbs extra virgin olive oil, plus extra for drizzling
½ medium yellow onion, diced (about 1 cup)
1 rib celery, finely diced (3/4 cups)
1 carrot, peeled and diced
2 cloves garlic, thinly sliced
1 sprig fresh rosemary, leaves stripped from stem
Fresh ground black pepper
1 (5oz) bag baby spinach leaves
1 (7oz) can diced tomatoes
½ small package fresh basil leaves, chopped
½ tsp dried oregano
7 oz canned white beans (cannellini), rinsed (about ½ of a 14.5 oz can)
1 qt chicken stock
1 small loaf Italian bread
½ cup grated parmesan cheese

Directions
1. In a soup pot or Dutch oven heat the 2 tablespoons olive oil over medium-low heat (setting 2).
2. Add the onions, celery, carrots, garlic, and rosemary; add a pinch of salt and pepper.
3. Cook until the vegetables are soft and tender, about 5 minutes.
4. Add the tomatoes, basil, and oregano and add another pinch of salt and pepper.
5. Stir in the beans, spinach, and chicken stock, and adjust the heat to simmer (MIN setting) gently for 10 minutes.
6. Meanwhile, cut crust from bread loaf* and then tear bread into 1 inch chunks by hand.
7. Stir in the bread, increase the heat to setting 1, and cook until the soup thickens, about 5 minutes more.
8. Season with salt and pepper.
9. Ladle soup into bowls. Top with cheese and a little drizzle olive oil.

Makes 8 servings
