Fresh Summer Berry Parfait
If you’re anything like us, summertime means pints upon pints of fresh summer berries. This time of year they are at their peak, and our kids (okay, us too!) can hardly keep their fingers free of the sweet, staining juice of perfectly ripe strawberries and blueberries after our weekly trip to the farmer’s market.
Usually we eat our berry haul just like that–straight from the carton–but every once in a while we like to mix it up by adding a little extra something to take them over the top. This parfait recipe does just that, without adding too much fuss (we’re all about the simple in the summer).
Let your kids pick the berries at the market, then get hands on in the kitchen by beating the yogurt and layering the parfaits. We like the thickness of Greek yogurt with just a touch of honey; if you’re using vanilla yogurt there’s no need to add the honey as the berries add enough sweetness on their own.
Summer Berry Parfaits
Makes 4 servings
1 pt fresh strawberries, hulled and quartered
1 cup Greek yogurt or vanilla yogurt
1 tsp honey (optional)
1½ cups fresh blueberries
Small loaf of pound cake or granola* (optional)
1. Wash and dry all the berries. Remove the stems from the strawberries and quarter them.
2. In a large bowl, combine the yogurt and honey, if using. Beat with an electric mixer on medium, until fluffy.
3. Spoon strawberries into the bottom of cups or bowls, and then spoon some of the yogurt mixture on top. Top with blueberries creating a red, white and blue striped parfait.
*Notes: Make the parfait breakfast-friendly by adding a layer of granola, or serve it as a dessert by layering on top of a piece of pound cake.
